From my Mamaw's recipe collection.

Number Of Ingredients 7

1 cup(s) shortening
1 1/2 cup(s) sugar
3 - eggs
3 cup(s) flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 - 9 ounce package condensed mincemeat, crumbled

Steps:

  • Preheat oven to 375. In large mixer bowl, beat shortening and sugar until fluffy. Add eggs; beat well. Combine dry ingredients; gradually add to shortening mixture. Mix well. Stir in mincemeat.
  • Drop by rounded teaspoonfuls, 2 inches apart, onto greased baking sheets. Bake 8-10 minutes or until lightly browned. Cool. Frost, if desired.
  • Tip: For a more cake like cookie, substitute 1 1/3 cups (one half 27 ounce jar) mincemeat for condensed mincemeat.
