Steps:
- 1. Let beef stand at room temperature for 1 hour. Sprinkle with kosher salt. 2. Preheat oven to 400. 3. Crush garlic and combine with dijon, spices, and olive oil. 4. Rub mixture all over beef, then bake at 400 for 30 minutes. Reduce temp to 350, and continue to bake for another 30 minutes. 5. Add broth to pan, and roast until meat thermometer reaches 135 or to desired doneness. Remove from oven, and let stand about 20 minutes. 6. Heat roasting pan over medium-high heat; bring broth mixture to a boil, scraping to loosen browned bits. Stir in wine; boil 5 minutes or until reduced to 2/3 cup. Serve with beef.
