- Peel the Prickly Pears. Chop both ends off of each fruit. Cut the skin lengthwise halfway deep through the prickly pear. Reach into the slit and peel away the thick skin. Combine peeled prickly pears, lemon juice, sugar, and water in a blender or food processor. Blend until mixture is smooth and has a red-fuschia color. Strain mixture through a paper towel in a colander into a pitcher. Pour over ice and add mint and lemon slices. Serve cold.
