Preacher's Cake Better with Butter image

This is an Old South recipe for a quick cake you could make when the preacher was dropping by. It calls for two of almost everything and includes two sticks of butter creamed with the sugar as some other recipes do not. 2 stick butter or margerine, softened
2 c white sugar
2 eggs
2 tsp baking soda
2 tsp vanilla
1/2 tsp salt
1/2 c chopped pecans
1 can(s) (20 oz.) crushed pineapple in its own juice, drained, reserve juice
2 c sifted flour

Steps:

  • 1. Preheat oven to 350 F. Grease and flour a 9"x13" oblong pan.
  • 2. Cream together butter or margarine, sugar, eggs, baking soda, vanilla and salt.
  • 3. Gradually blend flour into creamed mixture with reserved pineapple juice.
  • 4. Fold in pineapple and chopped pecans with a rubber spatula until well incorporated throughout the batter.
  • 5. Bake in prepared 9"x13" pan for 35 to 40 minutes.
  • 6. Ice with your choice of frosting, glaze or sift a little powdered sugar over the top.
