POTATO SALAD WITH RED BELL PEPPERS, CAPER AND CILANTRO image

14 Yukon Potatoes (about 3 lbs), cut i t chunks
1/4 cup Dijon mustard
2 tlbs whit wine vinegr
1/2 cup plus 2 tlbs olive oil
1/4 cup drained capers
2 red bell peppers, chopped
1 cup chopped green onions
3/4 cup chopped cilantro

Steps:

  • Working in 2 batches, boil potatoes in large pot until tender. Transfer to large bowl. Meanwhile, mix mustard and vinegar in medium bowl. Gradually whisk in oil. Mix in capers. Pour dressing over warm potatoes. Cool. Mix in bell peppers, onions and cilantro. Season with salt and pepper. (Can be made 1 day ahead, Cover, chill.)
