POTATO SALAD W/ RED BELL PEPPERS, CAPERS & CILANTRO image

Number Of Ingredients 8

14 red potatoes (3 lbs), cut into 1/3" thick slices
1/4 c. Dijon mustard
2 Tbs. white wine vinegar
1/2 c. olive oil
1/4 c. drained capers
2 red peppers, chopped
1 c. chopped green onions
3/4 c. chopped cilantro

Steps:

  • Working in 2 batches, steam potaotes in large pot until tender, about 10 min. Transfer to large bowl. Mix mustard & vinegar in bowl. Gradually whisk in oil. Mix in capers. Pour dressing over warm potaotes. Cool. Mix in red peppers, onions & cilantro. Season w/ salt & pepper. (Can be made 1 day ahead. Cover;chill)
