POTATO, FENNEL, AND SAUSAGE ROAST image

Number Of Ingredients 5

1 3/4 lbs. small red potatoes, cut into 1 inch pieces
1 large fennel bulb, trimmed and cut into 1 inch pieces
1 tbs. olive oil
1 1/4 tsp fennel seeds, crushed in mortar and pestle
1 lb hot italian sausage, sliced

Steps:

  • Preheat oven to 425. Combine first 4 ingredients in large baking pan. Toss to coat with oil. Season with salt and pepper. Bake 20 minutes. Add sausage and bake 30 munites.
