POT STICKER SOUP image

Yield 4 servings

Number Of Ingredients 6

1 32 oz. box of broth (chicken, vegetable, etc.)
1 cup water
2 teaspoons grated fresh ginger
2 10-oz. pkg. frozen pot stickers or dumplings
2 medium carrots, peeled and cut in thin 2" strips OR 1 cup shredded carrots
1 small bunch scallions, trimmed and cut on the diagonal

Steps:

  • 1 - In a Dutch oven, combine broth, water, ginger and seasoning packet from pot stickers (if no packet was provided, add 2 teaspoons soy sauce and 1 teaspoon toasted sesame oil). Bring to boil over high heat. 2 - Add potstickers, carrots, and most of the green onions. Return to a simmer. Reduce heat and cook, covered, for 8-10 minutes or until potstickers are heated through. 3 - Ladle soup into bowls. Sprinkle with remaining green onions.
