POT ROAST CHILI image

Number Of Ingredients 7

About 3 cups cooking liquid from pot roast
Chopped beef & vegetables
1 tsp vegetable oil
2 cloves minced garlic
1 Tbsp & tsp cumin powder
1 tsp chili powder
2 cans no-salt black beans

Steps:

  • 1. Heat oil in pot on stove, add garlic, cumin, and chili powder. Cook and stir for 2 mn. 2. Stir in black beans, leftover beef & veggies, cooking liquid, and salt as needed. 3. Heat to boiling, then reduce heat to simmer 10 mn., stirring occasionally. 4. Serve w/ chopped cilantro, sour cream, and lime wedges.
