Pork Chops with Raspberry Sauce image

4 to 6 boneless pork chops
2 tsp garlic salt
1 tsp black pepper
2 Tbsp olive oil
1-1/2 cups chicken broth
1/2 cup seedless raspberry jam
2 Tbsp Dijon mustard
1 Tbsp cold butter
2 Tbsp chopped flat leaf parsley
1/4 cup fresh raspberries

Steps:

  • Season chops with garlic salt and pepper. Heat oil in a large skillet. Brown pork chops on both sides over medium heat until pork is cooked through. Remove to a plate and cover with foil.
  • Add broth to the same skillet. Bring to a simmer, scraping up brown bits. Whisk in jam and mustard. Cook for a minute or two. If sauce is to thick add a little water or more stock.
  • Turn off heat and whisk in cold butter. Add parsley. Serve on top of chops. Garnish with fresh raspberries.
