Pork Chops in Wine Sauce image

Flavorful and tender -- great with a side of white rice and a salad.

Number Of Ingredients 11

1 cup(s) flour
6 pork loin chops (approx. 1/2 pound each)
2 tablespoon(s) olive oil
2 clove(s) garlic, minced
1 medium onion, diced
1 cup(s) chicken stock
1/2 cup(s) wine (red or white)
2 tablespoon(s) tomato paste
1/2 teaspoon(s) freshly ground black pepper
salt to taste
chopped parsley for garnish

Steps:

  • Coat the pork chops in flour and set aside.
  • Heat olive oil in a skillet over medium-high heat and add the chops, browning on each side.
  • Season with salt and pepper and add the garlic, onion. and chicken stock. Whisk together the wine and tomato paste well and add the mixture to the skillet. Cover and reduce heat to low -- simmer gently for one hour.
  • To serve, place the chops on a serving platter with a squeeze of lime. Spoon the sauce over the top and garnish with parsley.
