Poppy Seed Chicken -and some for freezer image

This makes 4 casseroles. Yummy recipe that began as a fundraiser for my kids pre-school. Each parent was given the recipe and the disposable containers. After making and freezing, they were sold and were a major hit and great fundraiser.

Number Of Ingredients 7

4 lb chicken breasts, boneless and skinless, cooked
32 oz sour cream
4 box prepared rice-a roni
4 pkg ritz crackers crumbled
2 c butter, melted
4 Tbsp poppyseeds
4 can(s) cream of celery soup

Steps:

  • 1. cut cooked chicken into 1 1/2 inch pieces, or shread.
  • 2. Prepare Rice a roni, and Divide into 4 casserole dishes or disposable pans.
  • 3. combine soup, chicken and sour cream. Layer on top of Rice a Roni.
  • 4. Combine cracker crumbs and butter, then divide between the casseroles and put on top. sprinkle with poppy seeds.
  • 5. Either FREEZE , or Bake 350 covered, then uncover and cook 15 minutes more. MAKES 4 CASSEROLES
