Steps:
- Combine shallot, pomegranate seeds, oil, lemon zest, lemon juice, vinegar, and chopped mint in a small bowl; season with salt and pepper.
- DO AHEAD: Relish (without mint) can be made 1 day ahead. Cover and chill.
