Polynesian Feast Meatloaf image

A nice change of pace from the same old meatloaf. If you can't find Chinese sausage ground pork may be used. Read entire recipe before starting.

1 1/2 lbs lean ground beef
1 lb Chinese sausage, ground
2 cups breadcrumbs, dry
1 (12 ounce) can evaporated milk
2/3 cup chopped leek
3/4 cup chopped carrot
8 ounces water chestnuts, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 tablespoons char siu Chinese barbecue sauce or 2 1/2 tablespoons hoisin sauce
5 eggs

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine all ingredients together.
  • Pack mixture into a ring mold.
  • Empty mold upside down upon a baking sheet that has been covered with foil.
  • Brush with extra Char Siu sauce.
  • Bake for 1 hour.
  • Cool slightly and garnish with browned pineapple rings and Maraschino cherries.
  • Place cooked rice in the center of the ring and serve.
