Can you smell it. It's vanilla and pear working their magic. We loved this simple recipe, they were great served warm or cold. I'm a purist but my husband likes his poached pears with vanilla bean ice cream drizzled in dark chocolate sauce. You won't be sorry that you tried the pears they are great served either way.

Steps:
- 1. Peel the pears and leave the stem intact. Slice off the bottom 1/8 inch of each pear. Sprinkle each pear with lemon juice to keep pear from browning and set aside until needed.
- 2. Combine the water, sugar, cinnamon and vanilla bean seeds and pod in a medium pan and bring to a gentle boil over medium heat, stirring until sugar is completely dissolved.
- 3. Reduce the heat to keep the poaching liquid at a bare simmer, then add the pears and simmer until tender. (10 - 20 minutes) Cook to your personal preference.
- 4. Turn occasionally to ensure even cooking. Serve with poaching liquid if desired.
- 5. Enjoy!
