Plum Coolers image

Infusing simple syrup with fresh plums gives this drink something special and makes a pretty rosy layer. The plums you use to make the syrup become soft and sweet -- perfect for serving over ice cream. For an instant party, serve these delicious drinks with Crostini with Green Apple and Prosciutto.

1 cup sugar
3 plums, cut into 1/2-inch wedges, divided
1/3 cup lemon juice (from 3 lemons)
12 ounces vodka
Seltzer

Steps:

  • In a small saucepan, bring sugar, 2 plums, and 1 cup water to a boil and cook 3 minutes. Let cool completely. Strain syrup through a fine-mesh sieve. (To store, refrigerate in an airtight container, up to 2 weeks.)
  • Fill eight glasses with ice. To each, add 3 tablespoons syrup, 2 teaspoons lemon juice, and 1 1/2 ounces vodka. Divide remaining uncooked plum among glasses, top with seltzer, and serve.
