Steps:
- Beat butter and sugar until smooth
- Mix in eggs one at a time
- Add vanilla
- Combine flour, baking powder and salt in a separate bowl
- Add flour mixture to egg mixture. Dough will be sticky and soft.
- Add a rounded teaspon of dough to hot pizzelle iron that has been lightly sprayed with oil and cook for about 3 minutes. (Timing is trial and error.)
- Remove cooked pizzelles with a fork and place on cooling rack
- Cookies hold for a long time, but will lose their crispness if stored in an airtight container.
