Pinto Bean Pie III image

This is a mock pecan pie, which is quite similar to pecan pie, except that it uses pinto beans instead of pecans.

1 cup pinto beans, drained and mashed
1 cup dark corn syrup
1 cup white sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
3 egg, beaten
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large bowl, combine beans, corn syrup, sugar, cornstarch and vanilla. Beat in the eggs. Pour into pie crust.
  • Bake in the preheated oven for 30 minutes, or until filling is set and crust is golden brown.
