Pineapple Walnut Cake image

Very moist cake. Great to be used as a "coffee" cake.

Number Of Ingredients 8

2 eggs
2 c sugar
2 c flour
1 tsp baking soda
1 tsp vanilla extract
20 oz can of crushed pineapple
1 c chopped walnuts or pecans
1/2 c flaked coconut

Steps:

  • 1. Preheat Oven 350 degrees.
  • 2. Beat eggs and sugar together for 2 minutes.
  • 3. Add your flour, baking soda, vanilla, can of pineapple (Do not drain), chopped walnuts (or pecans) and coconut. Beat until mixed together.
  • 4. Pour into a 13 X 9 pan sprayed pan with cooking spray.
  • 5. Bake for 35-40 minutes. This will be very moist to the touch.
