PINEAPPLE LEMON CHICKEN image

2 whole medium chicken breasts (about 2 lbs total)
1 20 oz can crushed pineapple in its own juice
1 small lemon, very thinly sliced
1/3 c ketchup
1/3 c honey
1 T Worchestshire sauce
2 cloves garlic minced
1 tsp salt
1/4 tsp rosemary, crushed
1 tsp cornstarch
Hot cooked rice

Steps:

  • Place chicken in ziplock bag. For marinade, drain pineapple, reserving 1/4 cup juice. Combine pineapple, reserved juice, lemon slices, ketchup, honey Worcestershire, garlic, salt and rosemary. Pour marinade over chicken and seal bag. marinate 2-24 hours. Take chicken out and reserve marinade. Grill over indirect hear until cooked through. Brush once with 1/4 cup reserved marinade about halfway through grilling. Combine remaining marinade and cornstarch in small saucepan. Cook and stir over medium heat until thickened and bubbly. Cook 2 minutes more. Spoon sauce over chicken and rice.
