Pineapple Cheese Casserole image

I had this a few years back for the first time and really liked it. It's a good choice for something different as a side dish.

Number Of Ingredients 7

2 20 0z can(s) pineapple tidbits, drain and reserve juice
3 Tbsp flour
5 Tbsp reserved pineapple juice
1 8 oz pkg shredded cheddar cheese
1 c ritz type crackers, crushed
2 Tbsp sugar
1 stick butter, melted

Steps:

  • 1. Preheat oven to 350 degrees. Lightly butter a casserole baking dish.
  • 2. Combine flour and pineapple juice, mix well. In a bowl stir flour mixture into the pineapple. Pour into the casserole dish.
  • 3. Combine the cheese, crackers, sugar and melted butter. Sprinkle this topping over the pineapple in the casserole dish.
  • 4. Bake for 40-45 minutes till bubbly and browned some on top.
