Steps:
- 1. Drain pineapple and reserve 1 c. juice. Set both aside.
- 2. In a large bowl, cream butter and sugar.
- 3. Add eggs one at a time, beating well after each addition.
- 4. Beat in egg whites.
- 5. Stir in flour then reserved pineapple and juice.
- 6. Gently fold in bread cubes.
- 7. Coat a 2 quart baking dish with cooking spray. Spoon the mixture into the prepared dish.
- 8. Bake uncovered at 350 degrees for 35 to 40 minutes or until top is lightly golden. Serve warm.
