Pineapple cake image

This is a great cake made with a cake mix. It's a nice cake for when you are in a hurry and don't have time for a cake made from scratch. The fluffy frosting gives it the extra homemade taste. My family loves it!

1 betty crocker super moist yellow cake mix
1 stick melted butter
3 eggs
1 - 20 oz can crushed pineapple with juice

Steps:

  • 1. Add cake mix to mixing bowl, add melted butter and eggs. Strain pineapple juice and then add pineapple to bowl. Add milk to juice to make a total of 1 cup liquid, add to mix. Beat together with mixer for 2 mins.
  • 2. Spray a 13 X 9 pan with cooking spray, pour in cake batter and bake 350 for 35 mins. When cooled completely, frost with fluffy frosting shown below.
  • 3. Fluffy Frosting: in small saucepan over medium heat, cook 1/2 cup milk and 2 1/2 Tablespoons of flour. Whisking constantly until thickened. Add 1 teaspoon vanilla. Set aside to cool completely. In a medium bowl, with mixer beat 1 stick butter and 2/3 cup sugar for 3 minutes until light and fluffy. Add cooled mixture and beat for an additional minute. Frost the cooled pineapple cake.
