PINEAPPLE-APPLE AMBROSIA image

Yield 10 cups

Number Of Ingredients 11

4 medium oranges, peeled
2 Fuji or Braeburn apples, cubed
2 c fresh pineapple chunks (or unsweetened canned)
1 c seedless red grapes, halved
1 c unsweetened pineapple juice
Sauce:
1/3 c sugar
1/2 t ground ginger
1/4 t vanilla
1/8 t almond extract
1/2 c sweetened flake coconut

Steps:

  • Cut oranges into 1/4 inch thick slices. Cut slices into quarters. Place in a large bowl. Add apples, pineapple and grapes. Stir together sauce ingredients. Pour over fruit and toss. Cover and chill 2 hours. Bake coconut in a shallow pan a5 350 until lightly toasted. Sprinkle coconut over fruit and serve immediately.
