I love the flavor of all the vegetables in this dish. They make a great accompaniment to any meal. This will take you some time to prepare, but is so worth the wait. A few of the people that love this recipe cannot seem to deal with the small seeds due to a medical reason, I will place them in a tea ball or cheese cloth and take them out later, once their flavor has been added.

Steps:
- After chopping and cutting all vegetables, place all ingredients into a large pot. Bring to a boil, reduce heat and simmer for about 5 minutes, stirring often. Remove from heat,place into jars, leaving 1/2-inch head space. Adjust liquid and seal.
