PESTO BAKED POTATO WEDGES image

(2) medium sized baking potatoes, such as Russet, scrubbed thoroughly to remove dirt and dried with a kitchen towel.
(3) tbsp Pesto Sauce

Steps:

  • - Preheat oven to 425 degrees - Prick the skin of the potato in a few places with a fork. Rub each potato with (1) tsp of the oil to coat evenly. Place the potatoes on an ungreased baking sheet in the middle of the oven. Bake until tender when pierced with a knife (about 1 hour). The potatoes should be cooked through and slightly crisp on the outside. Remove from the oven and set aside until cool enough to handle. - Preheat the grill - Cut each potato in half lengthwise and then in half again, to create (4) wedges. Spread the cut sides of each wedge evenly with some of the pesto and place the wedges on an ungreased baking sheet, pesto side up. - Place under the broiler and broil until bubbling, about 3 minutes. Place on a serving platter and serve immediately.
