7 eggs, separated
1 cup mashed banana
1/4 teaspoon salt
1 cup sugar
3/4 cup potato flour

Steps:

  • Beat the egg yolks.
  • Add the sugar and salt slowly, beating constantly, until lemon colored.
  • Add the banana and potato flour while beating.
  • Beat the egg whites until stiff, and slowly fold into the banana mixture.
  • Bake in a tube pan for 45 minutes at 350 degrees F.
