PERFECT PUMPKIN BARS image

I have made Christmas boxes of goodies & candies for about 30 years & this is one of my favorites to put in it.

Number Of Ingredients 17

2 c all purpose flour
2 c sugar
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/2 tsp ground cloves
1 c canola oil
1 (16 oz.) can(s) pumpkin (2 cups)
4 eggs
FROSTING
2 c powdered sugar
1/3 c butter, softened
1 (3 oz. ) pkg cream cheese, softened
1 Tbsp milk
1 tsp vanilla

Steps:

  • 1. Heat oven to 350°.
  • 2. Grease 15x10x1" baking pan.
  • 3. In large bowl, combine all bar ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed.
  • 4. Pour into greased pan.
  • 5. Bake at 350° for 25-30 minutesor until toothpick inserted in center comes out clean.
  • 6. Cool completely.
  • 7. In small bowl, combine all frosting ingredients; beat until smooth. Frost cooled bars. Cut into bars. Store in fridge.
  • 8. Sprinkle the top lightly with some nutmeg , cloves & cinnamon mixed, for color. It won't take much, so don't over-do it.
  • 9. Note: Sometimes I make these thicker like a cake, as above. May need 2 batches to accomplish this.
