Pepper Hash image

An old recipe. I think this would be great topping a good meatloaf just before baking it.

Number Of Ingredients 7

12 bell peppers (6 green, 6 red), seeded, chopped fine
6 onions, chopped fine
1 small white cabbage, chopped fine
1 qt vinegar
1 c brown sugar
2 Tbsp salt
2 Tbsp mustard seeds

Steps:

  • 1. In a cheesecloth combine the peppers, onion and cabbage. Scald in boiling water. Squeeze dry and remove from cheesecloth.
  • 2. Heat vinegar, sugar, salt and mustard seeds. Add vegetables and bring to boiling point.
  • 3. When cool, put into sterilized canning jars and seal.
