PENNE WITH SALMON AND ASPARAGUS image

Yield 4 servings

Number Of Ingredients 7

6 ounces uncooked whole wheat penne pasta
1 chicken bouillon cube
4 fluid ounces white wine
12 ounces of skinned and boned salmon fillet
1 bunch of asparagus
1 cup lowfat sour cream
2 tablespoons Italian salad dressing

Steps:

  • Cook pasta until al dente. Drain. I a large skillet, bring 1/2 cup water to boil. Add boullion, stirring until dissolved. Add wine. Add salmon and asparagus to skillet and poach for 5 minutes. Using a slotted spoon, remove salmon and asparagus, flake salmon. In a bowl beat together sour cream, salad dressing and reserved cooking liquid. Pour over pasta and salmon/asparagus and toss.
