Steps:
- CARAMELIZED ONIONS; 3T. unsalted butter, 2 large onions sliced into rings, 2 t. sugar. Melt butter, stir in onion, and coat. Reduce heat to medium & cook 10 to 14 min. stirring until onions are golden. Sprinkle sugar & cook 8 min. or less so as not to burn (Can cook ahead). Melt stick of butter, stir back onions, add salt & pepper. When sizzles add vodka and light with match and burn off. (approx 35 sec.) Return to heat & add shrimp & cook for several minutes, add heavy cream, tomato sauce, and chopped tomatoes. Bring to simmer. Stir in cheese, peas/asparagus. Again, Bring to simmer and stir in pre- cooked pasta. Serve on warm plates with fresh Parsley and toasted Italian bread.
