Pecan Rolls image

These pecan rolls are easy, they freeze well, if you don't put some in the freezer, you will eat them until your sick. these make a great Christmas gift. I give these rolls and my Carmel corn to all my friends and family for Christmas morning. Never had a return yet HaHaHaHa.

4 1/2 c all purpose flour
2 pkg instant yeast
1 1/4 c warm water
2 large eggs slightly beaten
1/2 c sugar
1 tsp salt
2 1/2 c brown sugar divided
2 tsp cinnamon
1/2 c butter
3 Tbsp light corn syrup
1 1/2 c chopped pecans

Steps:

  • 1. Making the dough. Mix the flour, sugar, salt and yeast. Add the warm water and beaten eggs and mix with you stand mixer until a soft dough forms. You can do this by hand also, just knead for about 5 minutes. Put the dough into a well greased bowl and cover, place in your oven with the light on and allow to rise until doubled in size.
  • 2. Next prepare your pecan sauce. In a small pot put in 1 1/2 cups of brown sugar 1/2 cup of butter and the Karo syrup. Bring to a boil, turn off the heat and add your pecans. Stir. Pour this syrup into a 9 x 13 pan and spread it over the bottom. Now lets make the rolls for the top.
  • 3. Lightly flour your work surface. Dump out the dough and roll out to approximately 14 inches x 14 inches, brush with 2 tablespoons of melted butter. Sprinkle with a mixture 1 cup brown sugar and cinnamon. Roll up jelly roll style and slice into 15 equal pieces. Place cut side down into the pan. Let rise until doubled in size. Bake in a pre-heated oven for 18 to 20 minutes. Remove from the oven a let cool then invert the pan onto the counter. This makes the pecans on top. Then place the rolls back in the pan pecan side up.
