Pecan Pie Surprise Bars, Mom image

Mom didn't specify what pan size to use, so I would say this is an 8x8 based on 1 cup pecans. I, however, double or triple this and use a 9x13. Trust me, it's that good!

Number Of Ingredients 7

1 - yellow cake mix
4 - eggs
1/2 cup(s) butter, melted
1 teaspoon(s) vanilla
1 cup(s) chopped pecans
1/2 cup(s) brown sugar
1 1/2 cup(s) dark corn syrup

Steps:

  • Oven to 350 degrees. Reserve 2/3 cup cake mix for filling. In large bowl combine remaining cake mix, butter and 1 egg. Mix until crumbly. Press in pan. Bake 15-20 minutes until light golden brown. Meanwhile, prepare filling by mixing reserved cake mix, vanilla, eggs, brown sugar and corn syrup. Pour over partially baked crust. Sprinkle with pecans. Return to oven and bake 30-35 minutes or until set. Cool and cut into bars.
