Pecan Crusted Salmon image

I was looking for something to do with my wild-caught salmon fillets besides just grill or broil them since I'm watching my weight. I love pecan crusted salmon, but all of the recipes that I found had way more calories and carbs than I wanted. I decided to experiment and I ended up with this delicious recipe that only has 391...

Number Of Ingredients 7

1 6 ounce boneless skinless salmon filet
1 tsp mayonnaise
1 Tbsp finely chopped pecans
1 Tbsp panko bread crumbs
1 Tbsp grated parmesan cheese (the kind in the jar is fine).
1 tsp melted butter
IF YOU NEED MORE THAN ONE FILLET, SIMPLY ADJUST THE INGREDIENTS FOR THE AMOUNT OF FILLETS YOU WANT TO USE.

Steps:

  • 1. Preheat oven to 425 degrees. Line a baking dish with foil and spray with cooking spray.
  • 2. Place salmon filet into the baking dish. Spread with mayonnaise.
  • 3. In a separate bowl, mix together bread crumbs, pecans, cheese, and melted butter. Press onto the top of the salmon filet.
  • 4. Bake for 15 to 20 minutes or until crust is lightly browned and fish flakes easily with fork. Enjoy without guilt!
