PECAN CRUSTED RACK OF LAMB image

Number Of Ingredients 8

2-4 racks, frenched
2 T olive oil
4 cloves of garlic
3 T dijon mustard
3/4 C pecans, toasted & chopped
2 T fresh Rosemary, chopped
2 T honey
salt & pepper

Steps:

  • Clean racks by removing excess fat from bones and meat. Season racks with salt and pepper. In a bowl, combine mustard, garlic, honey, pecans and Rosemary. Spread over the lamb. Place on baking sheet and roast at 400 for 25 min. or until 125 degrees.
