PECAN CRUSTED CHICKEN, WITH MUSTARD SAUCE image

Pecans 1 cup
Cornstarch 2 Tbsp
Thyme(dried) 1 tsp
Paprika 1 tsp
Salt 1.5 tsp
Cayenne to taste
Egg 1
Water 2 Tbsp
Chicken breasts
boneless,skinless 4
Cooking oil 3 Tbsp
Mayonaise 1 cup
Mustard, grainy
or Dijon 2 Tbsp
Vinegar- white
wine 0.5 tsp
sugar 0.5 tsp
Fresh chopped
parseley 2 Tbsp

Steps:

  • 1. In food processor, pulse pecans with thyme, paprika, 1.25 tsp salt, 1/8 tsp cayenne until nuts chopped fine. 2. Whisk egg and water 3. Dip each chicken breast in egg mixture, then into nut mixture. 4a. Can bake chicken in 350 oven for 20-25 minutes on parchment lined tray.Spray chicken 1st with canola oil. 4b. Heat 3 Tbsp oil in nonstick pan, moderate flame, cook chicken ~ 5 minutes/side until golden brown. 5. In small bowl, combine mayo, vinegar, sugar, parseley, pinch of cayenne, and remaining 1/4 tsp salt. Can serve as dipping sauce, or put directly on chicken
