Don't let the long list of ingredients discourage you from making this great healthy dish, it's worth the effort. If you are lucky enough to be cooking side by side with a friend, one person should prepare the sauce while the other sautes the vegetables. You can easily add chicken or shrimp to make this a hearty main dish.

Steps:
- 1. Heat 1 teaspoon oil in a small saucepan over medium heat. Add ginger and minced garlic, saute 30 seconds. Add chicken broth and the next 5 ingredients (peanut butter through salt), stir until well blended. Reduce heat and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm.
- 2. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas, saute 5 minutes or until tender. Remove from heat. Combine carrots, peanut butter mixture, bell pepper mixture and linguine in a large bowl, toss well. Serve warm or at room temperature.
