Peanutty Noodles image

Don't let the long list of ingredients discourage you from making this great healthy dish, it's worth the effort. If you are lucky enough to be cooking side by side with a friend, one person should prepare the sauce while the other sautes the vegetables. You can easily add chicken or shrimp to make this a hearty main dish.

1 c matchstick carrots
1 Tbsp vegetable oil
3 tsp grated peeled fresh ginger
4 1/2 clove garlic, minced
1 1/2 c fat free, less sodium chicken broth
3/4 c natural style peanut butter
6 Tbsp low sodium soy sauce
4 1/2 Tbsp rice or white wine vinegar
1 1/2 tsp chili garlic sauce
1/4 tsp salt
2 c red bell pepper strips
1 lb snow peas, trimmed
8 c hot cooked linguine (1 lb uncooked)

Steps:

  • 1. Heat 1 teaspoon oil in a small saucepan over medium heat. Add ginger and minced garlic, saute 30 seconds. Add chicken broth and the next 5 ingredients (peanut butter through salt), stir until well blended. Reduce heat and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm.
  • 2. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas, saute 5 minutes or until tender. Remove from heat. Combine carrots, peanut butter mixture, bell pepper mixture and linguine in a large bowl, toss well. Serve warm or at room temperature.
