PEANUT STUFFED PORK CHOPS image

8 pork chops, cut 1-inch thick
1 c croutons
1/2 c chopped salted peanuts
2 Tbsp instant minced onion
2 Tbsp finelty snipped parsley
1/2-1 tsp crushed chili pepper
2/3 c butter or margarine, melted
1 Tbsp water
3/4 tsp salt
1/2 c apple jelly
1 Tbsp lemon juice

Steps:

  • 1. Cut pockets in each pork chop. Mix croutons, peanuts, onion, parskey and chili pepper in bowl. Mix butter, water and salt. Pour over crouton mixture. Stuff pork chop pockets with c mixture.
  • 2. Hear jelly and lemon juice to boiling. stirring constantly. Preheat oven 375 degrees. Bake 1 hour covered with foil. Then 30 minutes uncovered. Brushing with jelly mixture 2 or 3 times during last 30 minutes. Makes 8 servings.
