Peanut Butter Crumble Topped Apple Pie image

I made this pie today for our desert. I love apples dipped in peanut butter so why not try this. It smelled wonderful while it was baking. I found this recipe in my Hershey's Desert Cookbook.

1 8 ounce container sour cream
3/4 c packed light brown sugar
2 eggs
3/4 c flour divided
1 Tbsp vanilla
1 tsp lemon juice
1/4 tsp salt
4 c peeled and thinly sliced apples
1 unbaked 9 inch pie crust
1 c quick-cooking or rolled oats
1 tsp ground cinnamon
1 c creamy peanut butter
1 Tbsp butter or margrine softened

Steps:

  • 1. Heat oven to 350 degrees
  • 2. Blend sour cream,1/2 cup brown sugar, eggs, 2 tablespoon flour, vanilla, lemon juice, and salt in a large bowl with a whisk. Add apples and stir until well coated. Spoon into pie crust.
  • 3. Stir together oats, remaining 3/4 cup flour, remaining 1/4 cup brown sugar, and cinnamon. Place butter and peanut butter in a microwaveable bowl on high 30 seconds or until butter is melted. Add to oat mixture; blend until crumbs are formed. Sprinkle crumb mixture over apples.
  • 4. Bake 55-60 minutes or until apples are tender and topping is golden brown. Cool completely and store left over pie in refrigerate leftovers.
