Peanut Butter and Kisses image

Mom has been making these during the Holidays for as long as I can remember. As soon as I was old enough to help in the kitchen I have been making them too!

1/2 c butter
1/2 c peanut butter;crunchy or creamy
3/4 c brown sugar, firmly packed
1/4 c sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1 3/4 c all purpose flour
1 tsp baking soda
3 Tbsp sugar
48 candy kisses, unwrapped

Steps:

  • 1. Preheat oven to 375F.
  • 2. In a medium bowl, beat together butter or margarine, peanut butter, brown sugar, 1/4c sugar, egg, vanilla and salt until light and fluffy.
  • 3. Add flour and baking soda to mixture; beating until thoroughly blended.
  • 4. Shape dough into 24 balls if you use a heaping tablespoon or 48 balls if you use a heaping teaspoon.
  • 5. Roll balls in 3T of granulated sugar until coated. Place 1/2 to 1 inch apart on ungreased baking sheet (I prefer baking stones, make sure it is made in USA to avoid lead issues.)
  • 6. Bake at 375F for 8-10 minutes or until light golden. Immediately top each cookie with a candy kiss, carefully pressing down firmly.
  • 7. Remove cookies from baking sheets; cool on racks.
