Peach and Prosciutto Flatbread image

Number Of Ingredients 10

1 pound Store-bought pizza dough
1 dash AP Flour - for dusting
2 Peaches, cut into edges
1 Kosher salt - to taste
1 Freshly ground pepper - to taste
1/2 cup Goat cheese, crumbled
2 tablespoon Parmesan -grated
3 ounce Prosciutto torn into pieces
1/2 cup Baby arugula
2 teaspoon Honey

Steps:

  • Preheat grill or grill pan to med-high. Lightly dust a work surface with flour. Cut pizza dough in half. Roll out each portion into a 8x14-in rectangle about 1/2 in thick. Brush grill with oil
  • Lightly oil and season peaches with salt and pepper. Grill for 2-3 minutes on each side until the peaches havenice grill marks; set aside. Grill dough for 2-3 minutes or until bubbles start to form and bottom is well-marked. Brush the top of the flatbreads with oil, flip and grill for 2-3 min more or until well-marked.
  • Scatter the cheeses, prociutto and peaches over the flatbreads. Place back on the grill for an additional 1-2 minutes until toppings are heated through. Top with arugula and drizzle with honey.
