2#'s Chicken liver
1/2 C chopped onion
2T butter
1/2 C sherry or cognac
1/2 t dried thyme
1/2 t salt
1T anchovy paste
3 oz cream cheese
1/2 C butter
1/2 C parsley for garnish
6 Granny Smith

Steps:

  • Saute liver and onions in butter until livers are just done. Mix in food processor until smooth. Reduce sherry or cognac by 1/2. Add to food processor. Add the rest of the ingredients, except parsley and apples and blend smooth Turn into an oiled mold. Chill. Garnish w/parsley, Serve with sliced apples.
