Steps:
- Melt butter in olive oil over med/low heat.
- Cook pasta in salted water (I use rice pot for this).
- Saute shallots 3 minutes (soften, not brown), add pancetta and cook for another 2-3 minutes (do this in normal pasta pot to have room).
- dd peas, stir to combine, then add 1/2 cup chicken broth. Simmer for ~10 minutes (until pasta is done).
- Add pasta and mix thoroughly. Add cheese, mix. Salt and pepper to taste.
