PASTA WITH TOMATO-MUSHROOM SAUCE image

Number Of Ingredients 12

1 pound Penne
3 tablespoons extra-virgin olive oil
2 Medium onions diced
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
3 cloves garlic minced
8 ounces mushrooms, sliced
1/3 cup dry red wine
3/4 cup chopped fresh herbs.(such as parsley and oregano)
1 28 ounce crushed red tomatoes
1 cup thinly sliced basil leaves
1/2 cup freshly grated Romano or parmesan cheese

Steps:

  • Meanwhile, heat the oil in large sauce pan over medium heat. Add onions, 1/2 teaspoon of the salt,1/4 teaspoon of the pepperand cook covered, approx. 8 min.Add the garlic and mushrooms cook for 6 min more covered.Add the wine and cook for 3 min. uncovered.Stir in chopped herbs, season with remaining salt and pepper, and cook for 4 min. Add the tomatoesand heat thru and add basil.spoon sauce over penne and add cheese.
