PASSOVER BLINTZES image

Number Of Ingredients 14

Badtter
3 eggs
1/2 tsp salt
3/4 C. matzah cake meal
1 tsp butter
1 1/2 C. milk
Melted butyter or margarine for frying
Filling:
2 C. Cottage cheese
8 Oa. farmer's cheese
6 Oz. cream cheese
6 Tbl. sugar
1 ewgg
1 1/2 tsp. vanilla

Steps:

  • Combine all batter ingredients in blender or food processor. Place in refrigerator for 1 hour. Mix filling ingredients together In 6 in frying pan put in scant 1/4 cup or less of batter into pan. swirl pan to cover bottom with batter. When batter is dry and edges begin to separate from pan. flip blintz leaf onto cloth. Fill with about 1 tbl of filling halfway between center and edge. fold bottom and side edges over and rollup away from you.
