Parmesan Roasted Zucchini image

This roasted zucchini recipe is wonderful for most weight-loss programs. Lightly brushing the oil on only adds a small amount and the Parmesan cheese adds so much flavor without a lot of calories. You can enjoy this recipe without guilt!

2 medium zucchini, sliced into approximately 1/4" slices
1 small amount of olive oil or other cooking oil for brushing
3 to 4 Tbsp parmesan cheese
salt and pepper to taste

Steps:

  • 1. Preheat oven to 425. Line a cookie sheet with aluminum foil and spray with cooking spray, set aside.
  • 2. Slice zucchini and place slices in the prepared pan. Pour a small amount of oil into measuring cup. Using a pastry brush, lightly brush the zucchini with oil. Unused oil can be returned to the original container.
  • 3. Sprinkle with salt and pepper. Sprinkle cheese evenly over slices. Bake for 15 to 20 minutes or until zucchini is tender and lightly browned. Enjoy as a side dish with your favorite entree.
