Parmesan Fried Chicken image

Olive oil
1/2 cup bread crumbs
1/4 cup grated parmesan cheese
2 Tbsp Italian herbs
1/4 cup milk
1 lb boneless skinless chicken cutlets

Steps:

  • Preheat 1 Tbsp. olive oil in nonstick skillet over medium-high heat. Mix bread crumbs, cheese, herbs, and 1 tsp. (more or less to make SLIGHTLY moist) olive oil to make crumb coating for chicken.
  • Dip chicken in milk, then in crumb mixture to coat.
  • Fry 1 or 2 pieces of chicken until golden brown (2 minutes), then flip and cook until done (2 minutes more). For each batch of chicken, add another Tbsp of oil to the pan.
