Pancake Muffin Combo image

In the kitchen with my children (we are always in the kitchen lol), they wanted me to make pancakes and I told my daughter if she could think of a way to make 12 pancakes at one time, yes. She thought and went right and got the muffin pan; I told her we're in business! Top with syrup of your choice and some of the whipped topping, sprinkle some powder sugar, and serve. You can add anything you want. This is a great recipe for children when trying to make pancakes for everybody in the house. You can have your muffin and eat it too.

3 cups pancake mix
2 cups water
3 tablespoons ground cinnamon
3 teaspoons vanilla extract, divided
1 teaspoon ground nutmeg
5 strips cooked bacon, crumbled
1 ½ cups heavy whipping cream
½ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Mix pancake mix, water, cinnamon, 1 teaspoon vanilla extract, and nutmeg together in a bowl. Fold in bacon. Transfer batter to a pitcher for easy pouring. Fill muffin cups to the top.
  • Bake in the preheated oven until golden brown, about 20 minutes.
  • Mix heavy cream and sugar together until you see peaks. Add remaining 2 teaspoons vanilla extract. Top muffins with whipped topping.
