½ cup orange juice
1 tablespoon curry powder
1 teaspoon chicken bouillon granules
½ teaspoon ground ginger
¼ teaspoon ground cinnamon
½ teaspoon salt
1 tart apple, peeled and diced
1 small onion, chopped
1 clove garlic, minced
¼ cup raisins
¼ cup flaked coconut
2 pounds boneless pork loin, cut into 1-inch cubes
2 tablespoons cold water
2 tablespoons potato starch

Steps:

  • Combine orange juice, curry powder, chicken bouillon, ginger, cinnamon, and salt in a slow cooker. Stir in the apple, onion, garlic, raisins, and coconut. Place pork cubes in the sauce.
  • Whisk together the water and potato starch in a small bowl until there are no lumps; stir into slow cooker.
  • Cover; cook on Low until pork is very tender, 5 to 6 hours.
