Paleo Miracle-Whipped Dressing image

This is the perfect homemade Miracle Whip® copycat free of soy, gluten, and preservatives. This recipe makes a small batch because it will only keep for about a week in the refrigerator, and we don't use enough to need anymore than that at a time. It is easily doubled, if you need a larger batch. Made as directed, this recipe is paleo-diet friendly, soy-free, gluten-free, grain-free, corn-free, and dairy-free. Enjoy! Store in a sealed container in the refrigerator for up to 7 days.

1 egg
3 tablespoons confectioners' sugar
2 tablespoons distilled white vinegar
¼ teaspoon lemon juice
⅜ teaspoon salt, or more to taste
¼ teaspoon garlic powder
¼ teaspoon dry mustard powder
¼ teaspoon ground paprika
1 cup extra-virgin olive oil

Steps:

  • Pour egg, confectioners' sugar, white vinegar, lemon juice, salt, garlic powder, mustard, and paprika into a blender; pulse until mixture is frothy.
  • Turn the blender on to low and slowly pour olive oil into egg mixture until dressing thickens and emulsifies.
